Summer Time Smoothie Bowls

Consistency? What’s that? Why would I just stick to one narrow topic of discussion on a blog when no one is going to stop me from experimenting?

So there you have it, I am experimenting. This time I am trying my hand at food recipes. My goal for this summer is to try out recipes that I have had around forever but just never got around to actually making, to try new foods, to feed myself better, and to cook for myself more often. It sounds like a lofty goal but during my interim job search period I found myself with a lot of time and a big appetite and so thus far I have been pretty successful at it.

Breakfast has never been my favorite meal of the day, I wouldn’t eat it when I was younger, and I am still not too keen on the meal. Breakfast is important, I understand that, but breakfast food and just be so bland and carb heavy. And so as part of my summer project, I have been experimenting with different breakfast dishes. Smoothie bowls are one of my favorites. They are flavorful, filling, and good for you.

And this recipe is fool proof.

Fair warning with this recipe though- I do not actually measure anything with measuring cups, but I do cook often enough to make educated guesses on how much I put in. Besides the precision to this recipe doesn’t matter terribly much.  Do you trust me?

Blend:

1 banana

1 cup orange juice

1 tbsp peanut butter

1 cup of mixed berries

(optional: 1 scoop of protein powder)

Pour into a bowl and add:

1/2 chopped banana

1 small handful of toasted almond slivers

a few pinches of chia seeds

warmed peanut butter drizzle

 

It’s simple and delicious.
